How do I make chocolate Yule log?

Our Yule Log Recipe tastes wonderful, is easy and quick to make and will go down supremely well at any Christmas party or get together, so why not give it a go, you won't be disappointed.

Ingredients for roll

  • 35g cocoa powder
  • 35g plain flour
  • 3 (seperated) large eggs
  • 100g caster sugar
  • tsp salt
  • 1/4 tsp cream of tartar
  • 2 drops of almond essence
    Ingredients for filling
  • 50g cocoa powder
  • 100g butter
  • 100g icing sugar
  • splash of brandy
  • caster sugar (for dusting)
  • cocoa powder (for sifting)

    Directions

  • For this Christmas recipe, firstly, pre-heat the oven to a temperature of 180 degrees C (350 degrees F) and grease a swiss roll tin measuring 9 ins x 13ins.

  • in order to make the sponge roll grab yourself a bowl and sift together the flour, cocoa powder and salt and place on the side. Once you have done this get a piece of greaseproof paper, sprinkle with caster sugar and again place on the side.

  • Next whisk together the egg whites until they begin to froth, add the cream of tart and again whisk unitl the mixture stiffens and finally whisk in the sugar until soft peaks commnece to form
  • When you are satisfied, the next thing you need to do for this Yule log recipe is to grab a bowl, add the sugar to it and whisk in the egg yolks until it thickens and becomes lighter in appearance. When it has reached this state add the almond essence.

  • Now. Do you remember the cocoa powder and flour mixture you placed on the side? Right. Grab this and with a large metal spoon and fold into the bowl the egg white mixture until it becomes thoroughly blended.

  • Next place the mixture into the swiss roll tin, ensuring the you level the top and bake for roughly 20 minutes, or until the mixture starts to feel spongey to the touch.

  • Once the yule log has finished baking, now it's time for the tricky bit. Here, turn the sponge onto a piece of greaseproof paper (the one which you dusted earlier). Peel the baking parchment away and roll the sponge, ensuring the greaseproof paper is on the inside, and set aside to cool.

  • Now it's time to make the buttercream filing. So grab yourself a mixing bowl and beat the butter until it becomes nice and smooth. When you're satisfied beat in the cocoa powder and caster sugar, and then add the splash of brandy.

  • By this time the sopnge should've sufficiently cooled. Now. Take this and carefully unroll it and spread it with half the filling (see to it that you do it without the greaseproof paper this time) and roll it back up again.

  • Finally, spread the rest of the filling over the yule log to cover it. Score with a toothpick, to create log-like contours and decorate with a dusting of icing sugar and sprig of holly.
