1.PERFECT PAELLA

Serves (4)

Ingredients

  • 500 ml water
  • 350 g texturised vegetable protein
  • vegetable oil
  • 200 g frozen vegetables
  • 200g long grain rice
  • 100 g sliced mushrooms
  • Salt, pepper and paprika to taste
  • Directions

  • Bring water to a boil in a saucepan. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Set aside.
  • Heat the oil in a frying pan over medium high heat. Cook frozen vegetables until thawed.
  • Stir in sliced mushrooms and TVP, cooking for 5 minutes, stirring occasionally.
  • Once vegetables are tender and vegetable protein is browned, stir in garlic salt and paprika. Reduce heat to low, and cook for another 3 minutes. Serve warm over rice.
  • 2.VEGETARIAN KORMA

    Serves (4)

    Ingredients

  • Vegetable oil
  • 1 diced onion
  • 2 g fresh ginger
  • 4 cloves garlic, minced
  • 2 diced potatoes
  • 4 diced carrots
  • 275 ml heavy cream
  • 1 chilli pepper
  • 1 can of chopped tomatoes
  • 15 g salt
  • 20 g curry powder
  • 200 g frozen peas
  • 1/2 green chopped bell pepper
  • 1/2 red chopped bell pepper
  • Directions

  • Heat the oil in a saucepan over medium heat. Stir in the onion, and cook until translucent.
  • Mix in ginger and garlic, and continue cooking for approx. 1 minute. Mix in potatoes, carrots, peppers, and chopped tomatoes.
  • Add the salt and curry powder. Cook for 10 minutes, stirring occasionally.
  • Mix in the peas, green bell pepper, red bell pepper, and cream. Reduce heat to low, cover, and simmer 10 minutes. Serve.
  • 3.NUT ROAST

    Serves (4)

    Ingredients

  • 3 chopped onions
  • 150 g walnuts
  • 750 ml soy milk
  • 100 g chopped celery
  • 500 g bread crumbs
  • 150g pecan or sunflower meal
  • Salt and pepper to taste
  • Directions

  • Preheat oven to 175 degrees C (350 degrees F). Lightly oil a loaf pan.
  • In a frying pan, sauté the chopped celery and onion in 50 ml of water until cooked.
  • In a bowl combine the celery and onion with walnuts, sunflower meal, soy milk, bread crumbs; mixing thoroughly. Place mixture into the loaf pan.
  • Bake for roughly 80 minutes; until the loaf is cooked
  • 4.SHEPHERDS PIE

    Serves (6)

    Ingredients

  • 1 chopped green bell pepper
  • 25 ml olive oil
  • 3 chopped onions
  • 3 garlic cloves
  • 1 can chopped tomatoes
  • 100 ml water
  • 450 g small red potatoes, halved
  • 100 ml milk
  • 100 g frozen peas
  • 100g cheddar cheese
  • Salt and black pepper to taste
  • Directions

  • Preheat oven to 200 degrees C (400 degrees F).
  • In a saucepan over medium heat, heat the oil; add the onions and garlic. Sauté until onions are soft, Remove to a bowl.
  • Heat remaining oil in the saucepan; add peppers, tomatoes and water. Sauté for 20 minutes. Mix in onions. Place into a baking dish.
  • In a saucepan, boil the potatoes. Drain and smash. Stir in milk, peas, salt and pepper. Spread over vegetables and top with cheese.
  • Bake for 15 minutes. Brown under the grill. Serve.

    5.ROASTED VEGETABLES

    Serves (4)

    Ingredients

  • 1/2 cubed sweet potato
  • 2 cubed red potatoes
  • 1 chopped onion
  • 1/2 swede
  • 1 diced red bell pepper
  • Pinch of basil
  • 30 ml olive oil
  • Salt and ground black pepper to taste
  • Directions

  • Preheat oven to 245 degrees C (475 degrees F).
  • In a bowl, mix the swede, red bell peppers, sweet potato, red onion, and red potatoes.
  • In another bowl, stir together the basil, olive oil, vinegar, salt, and pepper. Toss with vegetables until they are coated. Spread evenly on a large roasting pan.
  • Roast for 40 minutes in the preheated oven, stirring every 10 minutes.
  • 6.BUTTERED MUSHROOMS

    Serves (4)

    Ingredients

  • 250 g freshly sliced button mushrooms
  • 40 g butter
  • 5 g salt
  • Directions

  • In a saucepan, over medium heat, melt the butter. Add mushrooms, and sprinkle with the salt. Cook, stirring occasionally, until mushrooms soften.
  • 7.PERFECT PIZZA

    Serves (4)

    Ingredients

  • 2 (12 inch) pre-baked pizza crust
  • 500 ml tomato puree
  • 150 g sliced onion
  • 500 g grated mozzarella cheese
  • 150 g fresh sliced mushrooms
  • 50 ml olive oil
  • 150 g chopped green bell pepper
  • Directions

  • Preheat the oven to 175 degrees C (350 degrees F).
  • Place the pizza crust on a baking tray. Brush the crust with olive oil. Spread tomato puree over it with the back of a spoon. Sprinkle vegetables evenly over pizza crusts, and top with cheese.
  • Bake for 12 minutes. Serve.
  • 8.STEW

    Serves (4)

    Ingredients

  • 1 chopped parsnip
  • 1 chopped swede turnip
  • 1 chopped onion
  • 3 chopped carrots
  • 3 diced potatoes
  • 10 g black pepper
  • 10 g salt salt
  • 650 ml water
  • Directions

  • In a large pan over medium-high heat, combine allthe ingredients. Boil for about 30 minutes .
  • 9.BAKED POTATOE WITH CHEESE

    Serves (4)

    Ingredients

  • 4 baking potatoes
  • 30 ml olive oil
  • 15 g salt
  • 50 g butter
  • 5 g black pepper
  • 250 g grated Cheddar cheese
  • Directions

  • Preheat the oven to 150 degrees C (300 degrees F). Scrub the potato, and pierce the skin several times with a fork. Rub the skin with olive oil and salt.
  • Place the potato in the preheated oven, and bake for 85 minutes. Slice the potato down the center. Sprinkle with Cheddar cheese. Place back in the oven and cook for 5 more minutes. Serve
