Sweet Potato Bread Recipe

Ingredients
500g red fleshed sweet potatoes
5 eggs
10g runny honey
10g salt
400ml skimmed milk
900g white flour
Oil, for greasing
Poppy seeds
15g yeast
Directions
The first thing you need to do with this potato bread recipe is wash and peel the potatoes and proceed to cut them into cubes.
Once you have done this cook the potatoes in a pan of boiling salted water for approximately 10 minutes or until they tenderize. Drain the pan well, and then mash them until they become lovely and smooth.
At this point you can mix in the honey and milk and then place on the side until it has cooled.
Next, grab yourself the flour and salt and place it in a large mixing bowl. Mix in the yeast and make a nice little well in the center of the flour mixture.
Place this on the side and crack four of the eggs into a separate (separate from the flour, yeast and salt) bowl and then proceed to beat them until they are thoroughly blended.
Remember that well you made in the flour, to the center of this add the beaten eggs and sweet potato and give it a good old mix until a smooth dough forms.
The next step in this potato bread recipe is to find yourself a nice flat surface and sprinkle some flour onto it. Grab the dough and place it on the floured surface and proceed to knead it for roughly 10 minutes until the elasticity has increased.
Next find a generously sized bowl and using a little bit of oil, grease the sides of it. Pop the dough into this bowl, cover with film and place in a nice warm place for approximately 60 minutes, to allow to rise.
When this time has elapsed knock back the dough for a few minutes, divided into 32 pieces and shape these into rolls.
The penultimate task in this potato bread recipe is to place these sculptured rolls onto a floured baking tray, cover with film and place in a warmish place for about 10 minutes.
Finally, you can move on to the most rewarding part of this potato bread recipe by beginning to bake your masterpiece. Pre-heat the oven to a temperature of 200 degrees C (400 degrees F) gas mark 6.
While the oven is warming up, crack the last egg into a bowl and beat it. Brush the rolls lightly with the beaten egg and sprinkle with the poppy seeds. Place the rolls into the preheated oven and back for approximately 12 minutes. When the time has elapsed remove from the oven and allow them to cool down while you marvel at your work of art.
