1.PORK FILLETS

Serves (4)

Ingredients

  • 4 pork loin fillets
  • 200 ml Madeira wine
  • 1 tablespoon of olive oil
  • 25 g butter
  • 1 tablespoon parsley
  • 1 tablespoon basil
  • Salt and pepper to taste
  • Directions

  • Beat and flatten the pork fillets
  • Add the oil to a heated frying pan, season the fillets and fry until they are lightly brown
  • Remove the fillets and wrap in aluminium foil
  • Add the wine to the frying pan and cook until it is reduced by roughly 1/3
  • Mix in the butter and herbs
  • Coat the fillets in the sauce and serve.
  • 2.PORK IN BREADCRUMBS

    Serves (4)

    Ingredients

  • 4 pork chops
  • 50 g breadcrumbs
  • 20g parsley
  • 20 g basil
  • 10g dried onions
  • Salt and pepper to taste
  • Directions

  • Combine the breadcrumbs, herbs and dry onions and season
  • Place half the prepared mixture on a sheet of foil, with the pork chops on top of it, pouring the rest of the mixture on top of the them
  • Place in a preheated oven at 200 degrees C (400 degrees F) for 35 minutes.
  • 3.CHEESE AND POTATO BACON BITES

    Serves (4)

    Ingredients

  • 4 baking potatoes, cut into 1 inch slices
  • 50 g melted butter
  • 8 slices bacon - cooked and crumbled
  • 250 g shredded Cheddar cheese
  • 50 g chopped green onions
  • DIirections

  • Preheat oven to 200 degrees C (400 degrees F).
  • With butter brush both sides of potato slices; place them on an ungreased baking tray. Bake in the preheated oven for 35 minutes, turning once.
  • When potatoes are ready, top them with the bacon, cheese, and onion; continue baking until the cheese has melted
  • 4.TOMATO AND BACON BITES

    24 Servings

    Ingredients

  • 6 slices bacon
  • 100 g shredded Swiss cheese
  • 1 refrigerated pizza crust dough
  • 50 g chopped onion
  • 4 tomatoes, seeded and chopped
  • 1 g dried basil
  • 50 g chopped green bell pepper
  • 1 clove crushed garlic
  • 30 ml mayonnaise
  • Directions

  • Preheat oven 190 degrees C (375 degrees F).
  • Place bacon in a large frying pan over medium heat. Fry bacon until crisp.
  • Crumble bacon into a mixing bowl. Mix in bell pepper, basil and tomato. In a separate bowl, combine mayonnaise and garlic.
  • Roll pizza crust onto baking sheet; spread the mayonnaise mixture evenly over the crust. Sprinkle the bacon mix over the mayonnaise, and top the pizza with the cheese.
  • Bake for 20 minutes in the preheated until the top is bubbly and the crust is golden brown.
  • 5.TOAD IN THE HOLE

    Serves (4)

    Ingredients

  • 8 pork sausages
  • 125g plain white flour
  • 275 ml milk
  • 2 small eggs
  • ˝ tablespoon salt
  • Directions

  • Put the flour in a bowl make a hollow in the centre and break the eggs into the centre of it.
  • Mix in half the milk, stir until the mixture is smooth then add the remaining milk.
  • Allow to set of 20 minutes, whisk again.
  • 6.GLAZED HAM

    Ingredients

  • 1 bone-in shank ham
  • 125 ml honey
  • 125 g brown sugar
  • 50 ml liquid smoke flavoring
  • 35 ml Worcestershire sauce
  • 1000 ml water
  • Directions

  • For this thanksgiving recipe, firstly, pop the ham into a roasting tray, pour in the water and cover and allow to cook on a heat of 140 degrees C (280 degrees F) for roughly 8 hours.

  • Drain away the juices of the ham and keep to one side (it will be needed later. T this point you need to remove the bone from the ham. When you have done this place it back into the roasting tray.

  • The juices which you have at hand, needs to be mixed with the other ingredients, so that now. Cover the ham with juices and pop it back in the oven for roughly 45 minutes.
  • 7. SWEET & SOUR PORK

    Serves (4)

    Ingredients

  • 500g pork
  • 25ml plum sauce
  • 25ml soy sauce
  • 225g flour
  • Salt and pepper to taste
  • 300ml white wine
  • 2 egg yolks
  • 2 egg whites
  • 30ml vegetable oil
  • 1 diced green bell pepper
  • 1 diced red bell pepper
  • 1 diced onion
  • 100ml tomato sauce
  • 75ml vinegar
  • 100m clear honey

    Directions

  • For this pork recipe, firstly you’ll need t wash and dry the pork. You’ll then need to mix the soy and plum sauce in a bowl and place it on one side.

  • You’ll need to prepare the pork for the marinade by cutting it into strips and seasoning with the salt and pepper. Now place the pork into a plastic bag and pour in the prepared sauce. Seal the bag and give it a good shake and pop it in the fridge for 90-120 minutes to marinate.

  • In the meantime it is time to prepare the batter. In a mixing bowl combine the flour, egg yolk, white wine and give it a good old fashioned stir. Leave this to one side and start to beat the egg whites until they become fluffy, then add this to the batter mixture.

  • Now remove the pork from the marinade and coat them in the batter. And pop them into a frying pan or wok, cooking them until they start to turn golden brown. Remove them from the frying pan, cover them in foil and place them under a low grill to keep them warm.

  • In the meantime place the vegetables into the frying pan, heating slowly, to this add the honey, tomato sauce and vinegar, bringing to the boil. To this add the battered meat, simmering for roughly 5 minutes. Serve on a bed of noodles.
