PASTA LASAGNE Serves (4) Ingredients 600 g pasta sauce 350 g ricotta cheese175 g penne pasta 175 g lean ground beef 175 g shredded mozzarella cheese, divided 25 g grated Parmesan cheese Egg, beaten Directions Preheat oven to 175 degrees C (350 degrees F). Grease a baking dish. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 10 minutes; drain. In a large frying pan over medium heat, cook beef until brown; drain. Stir in pasta sauce; remove from heat. In a bowl, mix thoroughly the ricotta, 1 cup mozzarella, Parmesan and beaten egg. In the prepared dish layer half the pasta, half the sauce and half the cheese mixture. Repeat. Top with remaining mozzarella. Bake in the preheated oven for 40 minutes. PASTA WITH SWEET PEAS Serves (4) Ingredients 500 g pasta 200 g canned green peas 100 ml chicken stock 25 g butter Directions Bring a large pot of lightly salted water to a boil. Add pasta and cook for 10 minutes; drain. Stir in butter and peas. CHICKEN PASTA Serves (4) Ingredients 50 g pasta4 skinless chicken breasts 250 g frozen mixed vegetables 30 ml olive oil salt and pepper to taste Directions Preheat oven to 200 degrees C (400 degrees F). Bake chicken breasts in the preheated oven for 30 minutes if thawed or 45 minutes if frozen. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 10 minutes. 5 minutes before the pasta is ready, add frozen vegetables. When pasta is cooked, remove pasta and vegetables from heat, drain. Cut chicken into small cubes and add to the pasta-vegetable mix. Season PASTA WITH CHEESE Serves (4) Ingredients 25 ml olive oil 275 ml water 400 g peas, with liquid 250 g macaroni cheese 1 onion, chopped salt and pepper to taste 400g tin of chopped tomatoes 50 g grated Cheddar cheese Directions Heat olive oil in a frying pan over medium heat; sauté the onion for about 5 minutes. Add salt, pepper, chopped tomatoes and water; bring mixture to a boil and add peas; reduce heat and simmer for about 30 minutes. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 10 minutes. Stir cooked pasta and cheese into tomato sauce mixture. Cover pan and turn off heat; let stand for 20 minutes. Rice
SPICY CHICKEN AND RICE
Serves (4)
Ingredients
5 skinless chicken breasts
600 ml cream of chicken soup
600 ml chopped tomatoes in juice
Green chili peppers
250 g uncooked white rice
Salt and pepper to taste
Directions
Preheat oven to 175 degrees C (350 degrees F).
In a medium bowl combine the tomatoes and chilies, soup, rice, salt and pepper. Mix thoroughly.
Place chicken breasts in a baking dish. Pour sauce mixture over chicken. Cover and bake for about 45 minutes
EGG FRIED RICE
Serves (4)
Ingredients
Pinch of salt
150 g green beans
1 egg, lightly beaten
Ground black pepper to taste
50 ml soy sauce
100 g uncooked instant rice
5 ml vegetable oil
1/2 onion, finely chopped
Directions
In a saucepan bring water, salt and soy sauce to a boil. Add rice and stir. Remove from heat, cover and let stand 5 minutes.
Heat oil in a medium frying pan over medium heat. Sauté onions and green beans for 3 minutes. Pour in egg and fry for 2 minutes, scrambling egg while it cooks.
Stir in the cooked rice thoroughly and garnish with the pepper.
SAUSAGE FRIED RICE
Serves (4)
Ingredients:
250 g sausages
3 eggs, beaten
25 ml vegetable oil
200 can bean sprouts, drained
350 gpackage frozen green peas, thawed
Ground black pepper to taste
1-1/2 green onions, chopped
1/4 head cabbage, cored and shredded
1 carrot, chopped
500 g cooked white rice, cold
50 ml soy sauce, or to taste
Directions
In a frying pan over medium-high heat, cook the sausage until browned, remove sausage from the pan. In the same pan, using scramble the eggs, stirring frequently until cooked through. Set aside.
Heat the oil in another frying pan over medium-high heat. Stir fry the cabbage and carrots. Add the cold rice, and fry, stirring frequently. Mix in the sausage and pour in some soy sauce. Stir in bean sprouts, peas, and eggs, mixing thoroughly. Season with pepper, and stir in green onions just before removing from the heat.
