1.ROASTED LAMB LOIN

Serves (2)

Ingredients

  • 2 Lamb loins, trimmed of all the fat
  • 2 Tablespoons of oil
  • Salt and pepper to taste
  • Directions

  • preheat oven to 175 degrees C (375 degrees F)
  • Heat the frying pan and when it is hot add the the lamb and sear for two to three minutes on both sides.
  • Place the lamb loins in the preheated oven and cook until they are medium rare. Serve.
  • 2.ORANGE LAMB CHOPS

    Serves (4)

    Ingredients

  • 4 Leg lamb chops
  • 75 ml of wine vinegar
  • 60 ml lamb stock water
  • 50 g butter
  • 2 tablespoons of marmalade
  • 4 orange slices
  • ˝ spoon of ground ginger
  • Directions

  • Melt the butter in a frying pan, with a lid. Sauté the chops until golden brown
  • season with the ginger and a pinch of salt and paper
  • add to this the stock and vinegar
  • spread the marmalade evenly over each chop
  • cover and gently simmer for 35 minutes
  • Garnish with the orange and serve.
  • 3.SHEPHERDS PIE

    Serves (4)

    Ingredients

  • 450 g minced lamb
  • 700 g mashed potatoes
  • 1 onion
  • 275 ml of stock
  • 75 g cheese
  • Cornflower
  • Salt and pepper to taste
  • Directions

  • Heat oven to 175 degrees C (350 degrees F)
  • Finely chop the onion
  • Place the mince in the frying pan and cook until brown. Remove and drain well
  • Add the onion, cooking gently until the onion is cooked. Season with the salt and pepper
  • Return the meat to the heat and add the stock
  • Add the cornflower with a teaspoon of water, stirring thoroughly until thickened
  • Transfer the mixture into a casserole dish
  • Cover the mince with an even layer of mashed potato
  • Cover and bake for 40 minutes. In the preheated oven
  • Uncover and sprinkle with the grated cheese. And cook for an extra 15 minutes. Serve
  • 4.LAMB STIR-FRY

    Serves (4)

    Ingredients

  • 4 lamb steaks cut into strips
  • 200 g bean sprouts
  • 60 ml peanut butter
  • 200 g tinned sweet corn
  • 100 ml red wine vinegar
  • 75 ml soy sauce
  • 1 minced clove garlic
  • 125 ml water
  • 20 ml sunflower oil
  • 65 ml freshly chopped coriander
  • 1 diced red bell pepper
  • 8 chopped spring onions
  • Directions

  • For this lamb recipe, firstly, combine the peanut butter, garlic, water, red wine vinegar and coriander in bowl and give it a good stir.

  • Place the strips of meat into a re-sealable bag and add the marinade. Give the bag a thorough shake and place in the fridge to marinate for roughly 30 minutes.

  • Pour the oil into a frying pan and remove the meat from the bag and pop it into the frying pan and cook for about 3 minutes, making sure you stir it regularly NB Don’t throw the marinade away, you’ll need it for later.

  • Add to the sweet corn, onion and pepper and fry for another 2 minutes, stirring frequently.

  • Finally pop the bean sprouts and marinade into the frying for a final 2 minutes, stirring frequently. Serve.
  • 5.LAMB & MINT BURGERS

    Serves (4)

    Ingredients

  • 500 g lean minced lamb
  • 40 g fresh mint
  • Salt and pepper to taste
  • Directions

  • For this lamb recipe, firstly, pop the lamb in to a bowl, adding the chopped mint to this, and the salt and pepper. Give the mince a good old fashioned stir and knead with the hands if necessary.

  • Separate the lamb mix into separate, equal parts and mould them into burgers.

  • Place them onto a preheated grill and cook for 12 minutes, turning once
  • 6.LIVER & ONIONS

    Serves (4)

    Ingredients

  • 500 g lambs liver
  • 30 g butter
  • 2 thinly sliced onions
  • 30 g flour
  • 30 g gravy granules
  • 20 g thresh thyme
  • 500 ml boiling water
  • Directions

  • For this lamb recipe, firstly, pop the butter into the frying pan to this add the onions and thyme and cook until onions become translucent and leave to one side.

  • It’s now time to give the liver a little was and dry, cut it into slices and coat it with flour.

  • Add the liver to the pan with the onions in and cook for five minutes, turning once.

  • Meanwhile, mix the water with the gravy granules and give it a quick stir, once the liver has finished browning add the gravy mix to the frying pan and bring it to the boil. Remove from heat. Serve.
  • 7.LAMB KOFTAS

    Serves (4)

    Ingredients

  • minced lamb
  • 2g cumin (ground)
  • 5g coriander
  • 1 minced garlic clove
  • 5g paprika
  • 10g chopped mint
  • Olive oil splash

    Directions

  • For this lamb recipe you’ll have to combine all the ingredients together and roll them into 4 large balls or 8 smaller ones.

  • You’ll now need to place the lamb koftas onto skewers and coat them in a thin layer of oil. Place them on a grill and cook for roughly 8 minutes, turning once.
