500g pork meallions, sliced1 finely chopped garlic clove1tbspn olive oil1/2 inch fresh ginger root, grated125ml black bean sauce200g sweetcorn2 slliced spring onions2 tbspn freshly chopped coriander1 red bell pepper, deseeded and slicedDirections The first thing that you have to do in order to create this ginger pork stir fry masterpiece is to grab yourself a wok or a large frying pan, heat the oil, add the pork and ginger and toss together. Next - over a hot hob - stir-fry the with the garlic, spring onions, for 5 minutes until the pork is nearly cooked. When you have done this you'll need to add the bell pepper and sweetcorn to the stir-fry and cook for roughly 3 minutes further, then stir in the black bean sauce. Simmer on a low heat for further 5 minutes. When this time has elapsed spread the fresh coriander over the top of the stir fry and serve with noodles, or even rice, what ever takes your fancy.
