Remove the skin and any bones from the fish, then flake. Fry the chopped onion in butter. Combine the fish, mashed potato, onion, and parsley, season well. Mould into cakes and dip in beaten egg, then into well season flour, then back into the egg and coat with breadcrumbs. Grill gently for 5 minutes on each side until browned. Serve hot. 2.FISH BAKED IN LEMON Serves (4) Ingredients 4 cod fillets 1 tablespoon of butter4 tablespoons of lemon juice1 tablespoon grated lemon rindSalt and pepper to tasteDirections For this delicious fish recipe, firstly, preheat oven to 180 degrees C (350 degrees F) Place the cod on baking tray. Mix butter, lemon juice, grated lemon rind, salt, and pepper. Pour over fish. Bake for 25 minutes. Serve hot3.TANTILISING TROUT Serves (4) Ingredients 4 Trout Fillets 300ml of milk 4 tablespoons of water 4 lemon slices 100 ml of fish stock 50g Butter 25g Plain Flour 2 tabelspoons of lemon juice Directions Pre-heat oven to 180 degrees C (350 degrees F. For this delicious fish recipe, firstly, place the trout into an ovenproof dish, with a slice of lemon on top of each fish, add the water. Bake in the pre-heated oven for 15 minutes . Melt the butter in a saucepan over a low heat. Stir in the flour and cook gently for 3 minutes. Add the milk and stock, bring to the boil, stirring continuously, until thickened. Simmer gently for 5 minutes. Add the lemon juice. Place the fish on a serving dish, removing the lemon slices. Coat with the sauce. Serve. 4.TUNA CASSEROLE Serves (4) Ingredients 150 ml milk2 tablesppons of flour1 bag frozen mixed vegetables550g pasta250g canned tuna, drainedDirections For this delicious fish recipe, firstly, combine milk and flour in a pan over medium high heat. Add frozen vegetables and pasta. Bring to a boil, stirring occasionally. Cover pan, reduce heat to low and simmer 5 minutes stirring occasionally. Stir in tuna. Cover and cook over low heat 1 minute or until thoroughly heated. Serve5.OVEN FRIED FISH Serves (4) Ingredients 550g of cod fillets1/2 cup buttermilk4 lemon slices200g of breadcrumbs1 Tablespoon of butter, meltedDirections For this delicious fish recipe, firstly, preheat oven to temperature of 260 degrees C (500 degrees F). Dip fish in buttermilk, then in breadcrumbs to coat well. Place fillets on a baking sheet Pour on the butter. Bake in the pre-heated oven for 12 minutes, Serve with lemon slices.6.DELICIOUS HALIBUT Serves (4) Ingredients 1 Tablespoon of butter1.5 lbs. halibut steaks, thawed 2 Tablespoons. lemon juicePinch of salt to taste2 Tablespoons of chopped parsley1 lemon, cut into wedgesDirections For this delicious fish recipe, firstly, melt butter in a fryingpant over medium heat. Place the halibut steaks in the pan. Squeeze on the lemon juice and season with salt and pepper to taste. Cover the frying pan and simmer 10 minutes. Serve with parsley and lemon wedges. 7.GLAZED SALMON Serves (4) Ingredients 4 skinless salmon fillets150ml apple cider1 tablespoon of honeySalt and pepper, to taste2 lemons1 Tablespoon of butter300g of fresh baby spinach2 Tablesppons of white wineDirections For this delicious fish recipe, firstly, preheat oven to 175 degrees C (350 degrees F). Place salmon fillets in a baking dish .In a saucepan over medium-high heat, bring the cider and honey to a boil and let the mixture bubble steadily until it reduces by half.Put the salmon in the dish, skinned side up. Pour the cider over it, letting it sit for 10 minutes.Get a frying pan and over medium-high heat. Sprinkle the flesh side of the salmon with salt and pepper. Set the fish in the pan, flesh side down. Cook for 2 minutes, brushing the top with cider glaze so that the fish begins to caramelize.Turn the fillets over and brush with the remaining cider glaze. Add the lemon halves to the frying pan, cut sides down. Transfer the frying pan to the oven. Bake for 8 minutesWhile the salmon is cooking, in another frying pan over medium-high heat, melt the butter. Add the spinach, salt, and pepper. Cook for 1 minute. Pour the wine over them and continue cooking for 1 to 2 minutes more or until tender.Drain any excess liquid from the spinach . Place the spinach on the plates with the salmon on top and garnish with the lemon.Serve8.FISH PIE Serves (4) Ingredients 1 (12 inch) unbaked pie crusts 200 g tinned salmon200 g cream of mushroom soup 75 g white rice 225 ml water 2 thinly sliced small onions80 g sliced mushrooms10 g butter Directions For this recipe, firstly, place the rice in the water and cook it until it becomes soft.Get a pie dish and line it with the pastry.Get a frying pan and put into it the butter and heat it until melted, then pop the onions and mushrooms into it and cook until onions become translucent and the mushrooms, soft.In the meantime, mix the soup with the rice and pour half of it into the pie. Top this with the flaked salmon, mushrooms and onion and pour the second layer of rice and soup over this.Seal the pie with the rest of the pastry and make a couple of slits in the top and pop it into a preheated oven of 230 degrees C (450 degrees F) for roughly 15 minutes and then on a temperature of 180 degrees C (360 degrees F) for 30 minutes. Leave to cool. Serve. 9.SMOKED SALMON PATE Ingredients 650g smoked salmon275ml whipped cream cheese75ml mayonnaise30ml lemon juiceSalt and pepper to tasteDirections For this fish recipe, firstly, remove the tail and head from the fish and de-bone it.You’ll then need to get a blender, placing the salmon, cream cheese, lemon juice, mayonnaise, salt and pepper into it and blending until it becomes smooth.Serve with crackers or brown toast triangles What's your favourite fish recipe
