Brush both sides of chicken with oil and sprinkle with spice. Grill or broil 4-6 minutes per side 5 inches from heat source until cooked through. Serve sprinkled with parsley.2.CHICKEN AND MUSHROOM SOUP Serves (4) 175g cooked chicken fillets1250ml chicken stock 5 tablespoons peppercorns 1 tablespoon vegetable oil 5 tablespoons peppercorns 5 dried black mushrooms 2 spring onions 2 cloves garlic parsley 2 spring onions Directions Dice the chicken After the mushrooms have been soake for about 1 hour, dice themFor this chicken recipe, firstly,grind the garlic, pepercorns and parsley until they form a pasteHeat vegetable oil in a saucepan, add paste and cook for 1 minute, stirring continuously Stir in stock and mushrooms Simmer 10 minutes Add chicken, reduce heat and cook gently for 5 - 6 minutesGarnish with the spring onions and serve3.OVEN FRIED CHICKEN Serves (4 ) Ingredients 4 Chicken Breast Fillets 50g Breadcrumbs Pinch of pepperPinch of garlic powder1 tablespoon Parsley Pinch of PaprikaDirections For this delightful chicken recipe, firstly,pre-heat the oven to 190 degrees C (375 degrees F) Combine the breadcrumbs, herbs and seasonings Place half of the mixture on a sheet of tin foil on a baking tray and place the cicken on top, pressing down Add the remainder of the mixture on top of the chicken again pressing down Bake for about 45 minutes 4.SUCCULENT CHICKEN AND ONION Ingredients 4 skinless, boneless chicken breast halves 225 g onions, sliced into rings 1 clove of garlic, sliced75 ml lemon juice 125 ml white wine paprika to taste salt and pepper to taste Directions Preheat oven to 175 degrees C (350 degrees F) Lightly grease a baking dish Place in the bottom of the baking dish with 1/2 the onions and 1/2 the garlic slices Pour the lemon juice and white wine into the baking dish Season chicken with paprika, salt, and pepper, and place in the baking dish Top with remaining onions and garlic Bake 25 minutes in the preheated oven 5.CHICKEN CURRY Serves (4) Ingredients 5 chicken breast halves, skinless salt and pepper to taste 10 ml olive oil 1 onion, peeled and quartered 2g finely chopped fresh ginger root 2 g crushed garlic 5 g hot (Madras) curry powder 1 (15 ounce) can chopped tomatoes1 can coconut milk 3 cloves of garlic Directions Season with salt and pepper to taste Heat oil in a large frying pan over medium high heat, then saute chicken until browned. Remove chicken from frying pan and set aside Fry the onions in the frying pan until lightly brown Add the ginger and garlic and saute until fragrant, then stir in curry powder Return chicken to the frying pan and add the canned tomatoes, coconut milk and garlic. Season with salt to taste and stir all together Reduce heat to low and simmer for 25 minutes until chicken is tender and cooked through 6.CHICKEN STEW Serves (4) Ingredients 400 g cooked, cubed chicken breast150 g chopped carrots 25 g sliced fresh mushrooms 150g chopped onionr 150 g chopped carrots 1000 ml chicken stock 0.5 g dried sage 10 g multi purpose flour 0.5 g dried basil leaves 0.5 g dried parsley 200 g frozen mixed vegetables, thawed 350 g cooked, diced red potatoes 10 g multi purpose flour Directions Combine chicken, onion, carrots, mushrooms, and stock in a saucepan over medium heat Simmer for 10 minutes until carrots are tende Stir in the herbs,mixed vegetables, and potatoes and cook until heated through Stir in flour to thicken sauce, then serve 7.CHICKEN BURGERS Serves: 4 Ingredients 4 boneless, skinless chicken breast halves 4 hamburger buns 20 g butter 1 large onion, sliced into rings 75 ml mayonnaise Salt and pepper to taste Directions For this chicken recipe, firstly, pop the butter in a frying pan on a medium heat, place the onions into the pan and cook until they become translucent. And place on the side.Place the chicken under a preheated grill and kick for approx 16 minutes, turning once.Pop the buns in a toaster and lightly toast.Smear each chicken breast with the mayo and pop them onto the buns along with the onions. Serve.8.CHICKEN TIKKA Serves (4) Ingredients 4 chicken breasts cut into I inch cubes 500ml natural yoghurt 10g cumin powder 10g garam massala 10g hot chili powder 10g coriander powder 10g paprika 6 large garlic cloves 100ml lemon juice 5g grated ginger For this chicken recipe, firstly, in a bowl mix together the cumin, garam massala, chili, paprika and coriander powder along with the ginger and lemon juice and mix until a thick paste forms. Add a tablespoon of water to this paste along with yoghurt to this paste and give it a good mix. Place the chicken into a resealable plastic big and pour in the tandoori mix, give the bag a good shake and pop the bag into the fridge to marinate over night. Remove the chicken from the marinade and place them on skewers and place them in a pre-heated oven of 230 degrees C (450 degrees F) for roughly 20 minutes. Serve.
