Cheap Meatball Casserole Recipe

Directions
The first thing you need to do for this cheap meatball casserole recipe is to pre-heat the oven to a temperature of 200 degrees C (390 degrees F).

Next, season the mince with salt and pepper, peel and grate half a red onion and mix with the mince and 1/2 tablespoon of chili powder.

When you have done this shape and mould the mince into 20 equal sized balls. Then heat 1 tablespoon of olive oil in an oven proof casserole dish and cook the meat balls for approx 5 minutes, turning frequently until they are cooked through and brown. Remove them and place on the side.

Now, grab the remaining red onions, peel and slice them and add them to the dish along with the carrots - washed and finely diced - and cook (covered) for roughly 10 minutes, stirring occasionally, until they soften.

When you have done this add the meatballs and stir in the tomato & basil soup. Next, cut 6 petits pains in half lengthways, place on ttop of the meatballs and sprinkle with 1 teaspoon of dried mixed herbs. Bake in the ove for 15 minutes until piping hot and golden brown. Serve right away.

That's it, meatball casserole for less than a fiver. Not bad eh?
