1.PINEAPPLE SPONGE CAKE
Serves (14)
Ingredients
275 g flour
5 g baking powder
6 eggs
5 g salt
325 g white sugar
25 ml lemon juice
150 ml pineapple juice
150 g whipped cream
1 pineapple
12 strawberries
Directions
Preheat oven to 165 degrees C (325 degrees F).
Sift the cake flour and baking powder together.
Separate the egg yolks and the egg whites into two separate bowls. Beat the egg yolks until thick and fluffy. Gradually add half the white sugar.
Add the lemon juice and pineapple juice. Add the flour gradually while continually beating.
Add the salt to the egg whites and beat until peaks form. Gradually mix in the other half of white sugar.
Pour the egg white batter into an ungreased pan.
Bake in the pre-heated oven for one hour. Let the cake cool then decorate with the whipped cream, pineapples and strawberries.
2.CHOCOLATE CHIP CAKE
Serves (12)
Ingredients
500 g chocolate cake mix
125g instant chocolate pudding mix
250 g chocolate chips
4 eggs
5 ml vanilla extract
125 ml hot water
250 g sour cream
250 ml vegetable oil
Directions
Preheat oven to 175 degrees C (350 degrees F). Grease and flour a pan.
Combine cake mix, pudding mix, oil, eggs, water, sour cream, and vanilla. Beat until smooth. Stir in chocolate chips. Pour the mixture into the pan.
Place in the pre-heated oven for approx. 60 minutes
3.FABULOUS FAIRY CAKES
Serves (18)
Ingredients
175 g sugar
2 pinches of cinnamon
125 g margarine
200 g self-rising flour
2 eggs
Pinch of ginger
Directions
Preheat the oven to 175 degrees C (350 degrees F).
In a bowl, mix the sugar and margarine until light and fluffy. Beat in the eggs one at a time. Add the spices to the mixture and mix thoroughly.
Stir in the flour. Spoon a heaped tablespoon of the batter into each paper cup.
Bake for 20 minutes in the preheated oven, until they have risen.
4.PINEAPPLE UPSIDE DOWN CAKE
Serves (12)
Ingredients
150 g butter
250 g brown sugar
1 can sliced pineapple
10 strawberries
500 g white cake mix
Directions
Melt the butter over medium heat in a saucepan. Remove from the heat and sprinkle the brown sugar.
Next, place pineapple rings in the bottom of the pan. Place a strawberry into the centre of each pineapple ring.
Prepare the cake mix as outlined on the packet substitute some of the pineapple juice for some of the liquid in the directions. Pour the batter over the pineapple and strawberries.
Bake as directed, then carefully turn upside down onto a plate.
5.CARROT CAKE
Serves (14)
Ingredients
250 ml vegeatable oil
3 eggs
10 g baking powder
450g white sugar
250 g carrot baby food
250 g flour
2 g salt
3 g nutmeg
2 g cinnamon
Directions
Preheat oven to 165 degrees C (325 degrees F). Grease and flour a pan.
In a bowl, sift together the flour, baking powder, salt and the spices.
In another bowl, combine oil and carrot, then add eggs individually. Add sugar and mix well.
Add the flour mixture, mixing thoroughly.
Pour the mixture into the prepared pan and bake in the preheated oven for approx. 60 minutes.
Turn out onto a wire rack.
6.CHEESECAKE
Serves (12)
Ingredients
750 g cream cheese
250 g white sugar
2 g salt
5 eggs
1 ml almond extract
250 g sour cream
1 ml vanilla extract
Directions
Preheat oven to 165 degrees C (325 degrees F).
In a bowl, mix together all the ingredients, apart from the sour cream. Mix until smooth. Pour into a greased dish
Bake in the preheated oven for 50 minutes.
After letting it stand for 15 minutes it’s time to make the topping
Mix together the sour cream, 2 tablespoons sugar and mix until smooth. Spread over the baked cheesecake and then bake for another 10 minutes.
7.CHOCOLATE BROWNIES
Serves (20)
Ingredients
150 g white sugar
125 g flour
2 eggs
50 ml vegetable oil
10 ml vanilla extract
2 g baking powder
2 g salt
25 g cocoa powder
75 g peanut butter
Directions
Preheat oven to 175 degrees C (350 degrees F).
In a bowl, mix the sugar, oil, and eggs until light and fluffy. Mix in the flour, baking powder, salt, and cocoa
mix in the peanut butter. Spread the mixture evenly into the prepared pan.
Bake for 30 minutes in the preheated oven.
