Ingredients (serves 15)
450g jar of pitted black cherries
150ml cherry juice ( this is the liquid in the above jar
500ml double cream
400g chocolate buttercream
100g plain chocolate
25g cocoa powder
100g plain flour
150g white sugar
3 eggs
40ml brandy
10g arrowroot

Directions
The first thing you need to do for this black forest gateau recipe is switch on the oven and move the dial until it reads 190 degrees C (375 degrees F).

Second, grab yourself a bowl and using a whisk thoroughly mix together the eggs and the sugar until they become nice and thick.

Next mix the flour and cocoa powder together and gradually add it to the beaten egg and sugar. When you have done this pour the mixture into a greased round baking tin (roughly 9 inches) and bake for approx. 25 minutes or until it is firm.

The next step in this black forest gateau recipe is to remove the cake base fro the oven and tin and place it on a wire rack. In the meantime while it cools down, grab a saucepan and over a medium heat mix together the arrowroot and cherry juice bring to the boil, ensuring you stir it continuously until it becomes nice and thick.

Next, add it’s time to add some cherries, see to it that you reserve roughly 10 cherries for later decoration. Place half of the remaining cherries to the liquid and remove from the hob.

Now grab the double cream and whip until it’s nice and smooth and place 5 tablespoons of it into a piping back with a thick nozzle.

The next step in this black forest gateau recipe is to split the cake into 3 sections (basically you’ll need three discs). On the fist layer you need to spread on some of the whipped cream and roughly half of the cherry mixture.

When it comes to the second section, you should sprinkle it with the brandy, spread it with some of the chocolate buttercream and add the rest of the cherry mixture.

On top of this add the third section and smear the sides of the cake with the rest of the buttercream. Next it’s time to get artistic grab the plain chocolate and shave it to get little chocolate curls, take them and press them into the sides of the gateau.

Finally take the rest of the cream and spread it over the top of the cake, then proceed to decorate (using the piping back) with ten strategically placed whirls and place the cherries on top of each. Place the completed black forest gateau into the refrigerator and allow to cool for a few hours before serving.
