1.BEEF & VEG. SOUP
Serves (4)
Ingredients
500 ml beef stock
500 g ground beef
15 ml vegetable oil
400 g frozen mixed vegetables
2 minced garlic cloves
75 g cup pasta
500 ml water
Directions
Firstly, pop the oil into a saucepan. Add the meat to the pan and cook for roughly 5 minutes, stirring frequently.
Pop the rest of the ingredients into the pan and bring to the boil and allow to simmer for roughly 8 minutes. Serve.
2.PEPPERED STEAK
Serves (4)
Ingredients
4 sirloin steaks
1 packet gravy mix
200 ml water
2 red cubed red pepper
10 ml soy sauce
10 ml oil
1 sliced onion
Directions
For this meat recipe, firstly, combine the water, soy sauce, and gravy granules into a pan and give a good stir.
In a frying pan, pour in the oil and pop in the pepper and onions and cook for 5 minutes, stirring regularly.
Take the pepper and onions from the frying and pop in the meat and cook for roughly 5 minutes.
Finally add the peppers, onions and gravy to the pan with the meat in it, bring to the boil and allow to simmer for 12-15 minutes. Serve.
3.BEEF BURGERS
Serves (4)
Ingredients
500 g ground beef
1 lb. ground beef
4 hamburger buns
15 ml Worcestershire sauce
75 ml relish or barbecue sauce
15 g English mustard
4 cheese slices
˝ sliced onion
Directions
For this meat recipe, firstly, add the Worcestershire sauce to the meat and mould into
4 burgers.
Place them burgers under a preheated grill and cook for 12 minutes, turning once.
Finally transfer the burgers to the buns, put a scoop of mustard on the burger, add a cheese slice, place a scoop of relish or barbecue sauce on top of the cheese and then add the onions. Serve.
4.CASSEROLE
Serves (4)
Ingredients
750 g cubed braising steak
350ml Stock
200 g Mushrooms
400 g Chopped Tomatoes in sauce
15 g Tomato Puree
2 Onions
2 Carrots
1 minced garlic cloves
15 ml Oil
Salt and black pepper to taste
Directions
Preheat the oven to a temperature of 190 degrees C (380 degrees F)
Place the oil in a frying pan and add the steak to brown. Remove the steak from the frying pan and place on a plate.
To the frying pan add the carrots, onions and garlic and cook till they become tender.
Pop the steak into a casserole dish and add the stock, tomatoes, puree, salt and pepper and bring to the boil.
Cover the casserole dish and pop it in the preheated oven and cook for 90 minutes. At this point add the mushrooms, give a quick stir and place casserole bag in the oven for an extra 25 minutes.
5.BEEF PATTIES
Serves (4)
Ingredients
500 g lean minced beef
1 finely chopped onion
35ml English mustard
Salt and pepper to taste
Directions
For this beef recipe, firstly, combine the beef, onion, mustard, salt and pepper in a bowl and give it a good old fashioned mix.
Cut the beef into about 16 equal parts and mould into patties.
Pop them onto a preheated grill and cook for 15 minutes, turning frequently.
6.PRIME BEEF ROAST
Serves (5)
Ingredients
4 pound prime rib roast
75 ml Dijon mustard
2 sliced garlic cloves
Salt and pepper to taste
Directions
For this beef recipe, firstly, score the beef with a sharp knife and place the pieces of garlic into the slits
Season the roast with salt and pepper and smear the mustard all over it, cover the roast and place on a baking tray.
Place the roast in the preheated oven of 275 degrees C (550 degrees F) for roughly 1 hour. Turn the oven off and leave the roast to stand for 45-60 minutes. Carve, serve.
7.STEAK DIANE
Serves (4)
Ingredients
2 Rump steaks
50 ml olive oil
2 small diced onions
10 ml Worcestershire sauce
15 g wholegrain mustard
Splash balsamic vinegar
Splash olive oil
Directions
For this beef recipe, firstly, lightly heat the 50ml of olive oil in a frying pan and pop into this the diced onion, cooking them for roughly 5 minutes until they become translucent.
Secondly, mix in the other ingredients apart from the steak and allow to simmer for between 3-5 minutes.
In the meantime prepare the steak by cutting both pieces in half to make four separate pieces. You then need to tenderize them by giving them a good old bash with a meat tenderizer (see cookware utensils).
Pop some oil into a frying pan and cook the meat until the desired preference has been achieved (i.e. well done, medium rare etc). when you are satisfied with your steak, add to this frying pan the sauce and continue cooking for a further minute or so.
