Below my BBQ beef recipes, they’re a quick and tasty which are aimed to help you maintain your level of good housekeeping and are an excellent way to kick off a family barbecue. Why not try them out and see what you think. The recipes included are:

PAPRIKA STEAK

INGREDIENTS

Serves (4)

  • 4 350g fillet steaks
  • Extra-virgin olive oil
  • 5 g paprika
  • 3 g brown sugar
  • 3 g salt
  • 3 g black pepper
  • DIRECTIONS

  • Brush each side of the steak with the oil.
  • In a bowl mix together the brown sugar, salt, pepper and paprika, and with this season both sides of the steak
  • The steak should be grilled until the desired state as been reached (i.e. Medium rare, well-done etc), leave to cool for 3 minutes before serving
  • STEAK IN BARBECUE SAUCE

    INGREDIENTS

    Serves (4)

  • 4 rump steaks
  • 750 ml tomato ketchup
  • 5 ml soy sauce
  • 1 lemon, juiced
  • 10 g brown sugar
  • 10 ml Worcestershire sauce
  • 1 finely chopped small onion
  • 3 g garlic powder
  • Salt and pepper to taste
  • DIRECTIONS

  • Start the barbecuing the steak as required.
  • In a bowl mix together the ketchup, brown sugar, Worcestershire sauce, soy sauce and lemon juice. Then add the onion, sprinkle in the garlic powder, salt and pepper, mixing thoroughly.
  • About 5 minutes before the steak is fully cooked apply the sauce to both sides and carry on barbecuing.
  • SUCCULENT KEBABS

    INGREDIENTS

    Serves (4)

  • 475-500 g cubed rump steak,
  • 1 diced green bell pepper
  • 1 onion
  • Oil to apply to the kebabs
  • 200 g mushrooms
  • 1 diced red bell pepper
  • salt and black pepper to taste
  • 8 kebab skewers
  • DIRECTIONS

  • Cut the onion so it can fit appropriately on the skewer
  • Skewer the steak and vegetables in a alternate fashion, then brush the kebabs with the oil.
  • Put the kebabs under a pre-heated grill for 4 minutes, turning them over every now and again
  • Season the kebabs with the salt and pepper and pop back under the grill for another 4 minutes. Leave to cool for a couple of minutes. Serve
  • BACON CHEESEBURGER

    INGREDIENTS

  • 6 slices bacon
  • 2 pounds ground chuck (80% lean)
  • Kosher salt
  • Freshly ground black pepper
  • 6 thin slices extra-sharp Cheddar cheese
  • 6 hamburger buns
  • 6 crisp lettuce leaves
  • 6 slices ripe tomato
  • Ketchup (optional)
  • Mustard (optional)
  • DIRECTIONS

  • In a large sauté pan over medium heat, cook the bacon until crisp, 10 to 12 minutes, turning occasionally. Remove the bacon and set aside on paper towels to drain. Remove the pan from the heat.
  • Gently shape the ground chuck into six burgers of equal size and thickness (about 3/4 inch thick). Season both sides of the burgers with salt and pepper.
  • Grill over Direct Medium heat until the internal temperature reaches 160°F for medium, 8 to 10 minutes, turning once halfway through grilling time. Top each burger with a slice of the cheese during the last minute or two of grilling time and allow the cheese to melt. During the last 30 seconds, grill the buns over Direct Medium heat until lightly toasted.
  • Serve the cheeseburgers hot on the toasted buns with a lettuce leaf and a slice of tomato, topped with a slice of the bacon. Serve with ketchup and mustard on the side, if desired.
  • Makes 6 servings.

    PEPPERCORN STEAK

    Serves (6)

    INGREDIENTS

  • 4 rump steaks
  • 14 crushed black peppercorns
  • Oil to brush on the steak
  • Salt and pepper to taste
  • DIRECTIONS

  • Brush each side of the steak with oil
  • When you have crushed the peppercorns pres them firmly into the meat, to ensure they don’t fall off.
  • Season as desired and cook the steak to your specifications
  • BARBECUE LIVER

    INGREDIENTS

    Serves (4)

  • 750 g thinly sliced beef liver
  • 100 ml tomato ketchup
  • 40 g flour
  • 5 g salt
  • 10 g garlic powder
  • 25 ml vinegar
  • 2 g pepper
  • 125 ml water
  • 50 g brown sugar
  • 25 ml Worcestershire sauce
  • 25 ml vegetable oil
  • DIRECTIONS

  • In a plastic bag, mix together the salt, flour, and pepper. Place the liver into the bag and give it a good shake until the liver has been coated well.
  • In a bowl, add the water, garlic powder ketchup, brown sugar, Worcestershire sauce, and vinegar.
  • In a frying pan heat the oil. Sauté the liver slices on both sides.
  • Pour the sauce over the liver. Bring to a boil, reduce heat, and simmer for 18 - 20 minutes.
  • BARBECUE BEEF RIBS

    INGREDIENTS

    Serves (4)

  • 2 kg beef back ribs
  • Pinch garlic powder
  • 10 g minced garlic cloves
  • 250 ml tomato ketchup
  • 50 g finely chopped onion
  • 65 ml vinegar
  • 3 ml hot pepper sauce
  • 3 g chili powder
  • 5 ml Worcestershire sauce
  • 30 g brown sugar
  • DIRECTIONS

  • Cut the ribs to the desired size
  • Pop the ribs in a large pan and cover them with water.
  • Place the pan on the hob, uncovered, and simmer for 55 minutes.
  • In the Meantime, mix together the rest of the ingredients in a small saucepan, simmer, uncovered, for 10 minutes.
  • 10 minutes before the ribs have finished simmering pre-heat the oven to a temperature of 180 degrees C (350 degrees F)
  • Remove the ribs from the pan, and place in a baking dish, while pouring the sauce on them. Place them in the pre-heated oven for roughly 60 minutes
